Holy Pickles, Batman!

For Christmas, Jill got me a pressure cooker. I know that sounds like an odd gift for a wife to get a husband but she found out that I was thinking of getting her one and made sure I knew she didn't want another kitchen gadget. So a few days later on Christmas morning, I unwrapped a pressure cooker. I started making pickles that day. As you can see from the picture they look so good in the jar and the jars sealed great! However, when I opened one a day later they were all mushy. I mean really mushy. So, when I have time again I want to make another batch. I have heard that I need to make sure I get fresh cucumbers. Is that true? Does anybody out there make homemade pickles? If so, what's your secret?.....you can tell me I won't tell anyone. :)

I haven't made 'em, but relatives have. They always use fresh-from-the-garden cukes, and they don't come out mushy. There's also the possibility they were overly pressure cooked. Occasionally the cooking times given in canning books kill the foods. Just a thought. Have fun :)

According to my canning bible provided by Aunt Lorraine in 1975, I have never pressured any kind of pickles. You can hot water bath them for 5-15 minutes just to make them seal, but I don't even do that. What kind of pickles are you wanting-dill, sweet, etc? I have more to tell you if you want!! Love ya, Aunt Carol and I'm proud you're trying!!

Calvin, it's great to see pictures of you, Jill and girls. I hope everyone is doing ok in your new place. It sounds like you had a wonderful Christmas. We still have the fan that Lydia made for us in October. DOes she still have the Jump bracelet that Jeff gave her? I hope to hear more of everyone and all your adventures.
